Pickled Cucumber

Ingredients

300g water

60g salt

360g Apple cider vinegar

180g Honey in the Garden honey

500g sliced cucumber

4 bay leaves

10g peppercorn

10g thyme


Method

  1. In a small pot, dissolve salt in water over medium heat.

  2. Allow the pickling liquid to cool slightly, then stir in vinegar and honey.

  3. Add sliced cucumbers, bay leaves, peppercorns, and thyme. Ensure all ingredients are submerged in the liquid. Refrigerate overnight to allow the cucumbers to infuse with the flavors.

  4. Drain the cucumber pieces before using them in the sandwich.
